1、原料:里脊牛肉、牛柳(兔肉、鸡胸脯肉)。牛肉一种是小火煮30分钟,凉了以后切成条,基本上筷子粗细(鸡肉丁要凉水起锅绰一下);第二种做法是新鲜牛肉(兔肉也是新鲜的)直接切成细条(我个人喜欢这种),放一点料酒、盐、姜末腌20分钟。

2、佐料:姜末、蒜切成片、花椒、干辣椒段、香叶、山奈、八角、丁香、陈皮。

3、做法:油热后,下锅翻炒一会儿放白糖,如想出亮色最好放冰糖和红糖也行,继续翻炒,不要太干;

放入姜蒜花椒香叶等佐料,继续炒,然后放入酱油,上色后放入辣椒段;
